Textbook Chilean awesomeness here guys! Check out that seriously intense, rich, deep nose that's just alive with intense black fruit and a leafy twang. This is New World Cabernet Sauvignon in all its glory, with bags of structure combined with lots of freshness, and a lick of sweet oak on the finish. Opulent and rich, this is generous wine that just keeps on giving.

Founder, head winemaker and winemaking legend, Marco Puyo founded Viña Dagaz in 2015 alongside Patricio Gomez-Barris. Largely a consultant winemaker in Chile, Marco's reputation and legend in the domestic wine scene is legendary. Given his clear and obvious knowledge of the diverse range of vineyards, climates and terroir on offer in Chile, it surprised Marco in 2005 to find Pumanque, a unique terroir. These granite-based soils allow the team to produce some of Chile's most exciting and impressive wines. The soil is comparable to those found in parts of Côtes du Rhône in France and Rioja in Spain. Dagaz is an ancient Celtic rune that means 'the beginning of a new path', and is a suitable name for this project that reflects the new direction that both Marco and Patricio are taking. This project is brand new to the UK, so at Good Pair Day's HQ, when we saw Dagaz come up, there was only one thing left to do. The Estate range comprises of two reds, a straight Cabernet Sauvignon and Carmenere, whilst their top wine, Tierras de Pumanque is a world-class blend of Cabernet Sauvignon, Carmenere, Syrah and Petit Verdot.

This Cabernet Sauvignon from Viña Dagaz definitely doesn’t shy away from making an impact on the palate, giving some clue as to the kinds of flavours it will most happily pair with when it comes to dinner time! It’s a top pairing for richer dark meats, strong sauces, and punchy blue cheeses like Stilton or Gorgonzola, and you’ll find great results pairing this wine with porcini mushrooms, truffle dishes, and decadent sides like dauphinoise potatoes.

Colchagua is a wine region located in the Central Valley area of Chile. Colchagua is the Hollywood of Chilean Wine, which is separated into 12 separate sub-regions. The region is situated in a valley that runs between the Andes Mountains and the Coastal Range, with vineyards planted on gentle slopes at elevations ranging from 200 to 900 metres.
