Details
A delicious fizz made from mostly Pinot Bianco, from one of Italy's most consistent producers. This is one of those wines that you just don't need to think too hard about. Lots of mango and lemon notes marry with white peach blossom and florals. The mouthfeel is taught and linear, dry with a lovely focus and creamy finish. Unofficially, this is pretty much Prosecco, and we love it.

Filiberto Sacchetto and his family are a force to be reckoned with in Italy's sparkling wine scene. He is one of the most well respected producers of Prosecco, and has made it his mission, not to produce generic, smashable fizz that the many people look for, but to push perceptions of quality for the region. He has a number of projects and is a keen champion of organic viticulture which is portrayed in some of his more premium wines, which hail from some of the most beautiful wines in the rolling hills of Veneto - which in itself is pretty stunning! Nowadays his children, Paolo and Beartrice oversee the day to day operations. Whilst Paolo has inherited more of the winemaking aspect of the business, it is his sister, Beatrice who is very much the engine room at Sacchetto, overseeing sales and exports. Sacchetto are leaders in modern and innovative wine production. Their portfolio is not just limited to their wide range of Italian sparklers: they also work with a core range of single varietal still wines that are excellent examples of not only their variety, but of the Veneto region as well.

Pairing guide
Not all sparkling wine is made equal, as this deliciously dry bottle from Sacchetto proves in flawless style. With its biting dryness and bright fruit flavours, it’s a fantastic wine for pairing with spicy Asian and Thai food, especially fried starters with a chilli kick, or classics like salt and pepper squid, tonkatsu, and Sichuan sea bass. Charcuterie will also work well with this wine, and it’s going to be every bit as good with a plate of loaded fries, chicken wings, or fish goujons.
