This is a Grenache Blanc blend with a splash of Vermentino and Clairette that produces a stunning white for any occasion. Green apple with lemongrass and lime cordial dominate, backed up by white floral tones and a touch of salinity. The lemon and apple continue to drive through the palate with an expressive texture.
The French wine scene has changed a bit over the last fifty years, once upon a time growers would sell their fruit to wineries on a handshake and that was enough to make ends meet. Today, family vignerons have realised that there is a lot more at play when you can make your own wine as well as sell the fruit. Enter the Fontès family who started their journey in 1932, who focused on Clairette as their variety of choice. Post World War II, they expanded to red varieties and by the 1980’s they had the ability to bottle their own wines. Today, the family expanded from grape growers to owning several wine labels, all focusing on vineyards from Languedoc. The Prieuré Saint Hippolyte label is one of these, with a white, rosé and red under the label, each expressing a classic Languedoc element. The winery has evolved perfectly from a family focusing on the land, to now representing it in the bottle that gets to be shared with family and friends.

You can absolutely lean to more luxurious flavours and textures with this wine - we’re talking buttered seafood and shellfish, pork chops with a creamy sauce or herb crust, and chicken and mushroom recipes and pasta classics. Avocado salads, curries featuring a rich coconut or cashew sauce, Chinese lemon chicken and Japanese katsu classics will also work well, and it’s a natural pairing for brie, camembert and other runny French cheeses.
