This world-class Cava is all about finesse and precision. 'Brut Nature', meaning no sugar, this sparkler relies on plenty of fruit ripeness and a lovely pastry quality to carry the palate. Expect enticing notes of vanilla and baked almond with a stunning, saline, almost celery-like freshness on the palate. This is a masterclass in sparkling winemaking.
Dominio de la Vega are a brand new signing for us here at Good Pair Days. We recently discovered these outstanding Cava's whilst in France - of all places - in search of winey goodness. The estate was founded by a family of viticulturists who were also at the vanguard of extending Spain's Cava DO out to Requena in Valencia. Cava is a strange DO in that sense; whilst Penedès is considered the homeland of Spain's national sparkling wine, it can also be legally produced in Requena (thanks in large part to Dominio de la Vega's pioneering efforts), as well as in Rioja and Viñedos de Almendralejo, which can be found further inland towards the Portuguese border. The Utiel-Requena region is located in a warm and dry part of Spain, so Vega's vineyards planted at 600-900 meters above sea level are crucial for the production of sparkling wine, ushering in cool nights to help keep acidity levels high in their fruit. These Cava's are not to be missed and are a testament to the argument that it's not just Penedès that produces world-class sparkling wine in Spain.
