Details
The Standish Shiraz comes from the organically farmed Laycock Vineyard in Greenock, a part of the Barossa famed for delivering some extroverted Shiraz. This 2022 release is a wildly evocative wine, too—a black-coloured powerhouse with impenetrable dark fruit, dry black spices, flecks of liquorice, and moreish oak filling things out. It's bold, hedonistic, wildly intense Australian Shiraz for the ages.
In just 25 years, Dan Standish has landed a global reputation as one of Australia's most storied Shiraz producers. But the Standish story doesn't start in 1999, as Dan is actually a sixth-generation Barossan who started his own label while still working as a winemaker at legendary cult winery Torbreck Vintners. It all started with an ancient parcel of Shiraz owned by his father that Dan thought needed to be shouted out. That led to the initial 'The Standish' and fomented a whole label dedicated to delivering epic, single-vineyard Barossan Valley Shiraz. Beyond the celebrated vineyards that Dan utilises, an unquestioned part of the success of these dramatic, ultra-powerful wines is meticulousness in the winery, with up to 80% of the blend discarded in some years. Stir in wild ferments, plenty of whole bunches, and 18-22 months in oak, and you have a recipe for some outlandishly expressive Barossa Valley Shiraz.

Pairing guide
With its effortless power and weighty richness, this wildly impressive Shiraz really commands a pair with the intensity to match. Rich red meats, especially classic cuts, with a similarly salty meaty sauce will work wonders here, especially with a pepper/spice element to match the wine. Red sauce pasta is also a smart choice, with a liberal dose of Standish Shiraz in the mix, with the protein of choice either pork, beef or mushroom. Salty bean dishes will work wonders here too, and even rich (but not spicy) curry as a surprise pick.
