If you turned the lights out on this wine, you could pretend it were the most luscious Pinot Noir you've ever tasted. Superb aromatics, there is so much perfume going on here like sipping peppermint tea with jam on cinnamon toast. The palate is so deliciously juicy and fresh fruited; cranberries, sweet cherries and boysenberry, it's both light on its feet but full in flavour. An impressive wine.
Chris Catlow is the cat's meow. A Chardonnay - centric winemaker with kind eyes and a sharp wit, Catters isn't held back any need for fanciful equipment, and make's Sentio in an abandoned mental asylum in Beechworth. Drawing on his experience gained as a disciple of Beaune's Benjamin Leroux, Chris has drunk more old Burgundy, Barolo, and Champagne more than most, and probably not much else... He might just need a glass of water to reign in the prodigiousness. You can tell he cares about great wine, just in the personality of his wines. They're uncompromisingly good. In fact, one might argue, his Chardonnay is 'the best', and if that seems like an overstatement, then you try them and let us know. Catlow's red winemaking suits how he likes to drink. Burgundian in style, his repertoire spans the coolest sites in Victoria - from the King Valley to Beechworth, he is only limited by his intention to source the absolute best quality. For his Gamay, it's likely the best version on our shores, sourced from the King Valley, and made in multiple batches prior to blending to gain the best in aromatics, structure and texture.

Who could resist the fruity charms of this beautiful Gamay by Sentio (here’s a hint: it’s definitely not us). This delightful wine is sure to pair fantastically well with roast chicken and other poultry, as well as with casseroles, pies, and pasta sauces making good use of chicken thighs and game birds.
