Dry, with a sense of richness and fruitiness, but with a clean finish. Sesame and almond flavours mix with some melon and green apple. Led by the passionate Minakata-san and their innovative Toji (master brewer), Tsuda-san, this small but mighty brewery crafts an exquisite range of sakes that embody the spirit of Wakayama. It's a boutique, artisanal operation, but they take it seriously - despite being small, they employ at least 5 other people in the brewery team, ensuring quality at every step of production. From the aromatic Junmai Daiginjo to their rich futsushu, and their unique lineup of fruit-infused sakes, each bottle captures the essence of the local orchards.
