This isn't your everyday Sauvignon Blanc, and nor should it be, so clear out your New Zealand expectations and quiet your mind before drinking. The wine is four years old, but don't let that fool you, it has green apple and dried dill notes and then things get interesting with shortbread and vanilla highlights. It's crunchy and refreshing with still an added interest that will have you becoming an instant philosopher.

In the heart of the renowned Margaret River wine region, nestled amidst picturesque vineyards and rolling hills, lies Knee Deep Wines—an enchanting winery that not only captivates the senses but weaves a tale of passion, dedication, and the people who bring it to life. The winery is owned by Matt & Claire Holden, who were handed the reins by Phil & Sue Child when they decided to hang up their heavily wine stained boots several years ago. Matt Holden has been involved in the wine industry for over 20 years, working across both production and belting out the hard yards in hospitality. Now the Knee Deep winery has four main labels, Birdhouse, Third Rule, its namesake and In Reverie. Although Matt and Claire have enough on their plate already, they have also introduced the Quiet Mind brand, which is one or maybe two wines (depending on how they feel) per year, where Matt just embraces his 'Quiet Mind' to make a wine that he would simply just love to drink. Oh, and they also run their own wholesale business in Perth, which is fast becoming the best spot to purchase beer from.. phew!

You really can’t beat a chilled glass of Sauvignon Blanc with your dinner, and this beautiful bottle from Quiet Minds is an absolute stunner. As food friendly as they come, this white wine is going to pair wonderfully with green vegetable dishes with asparagus, green beans and peas, and vegetarian classics with goat’s cheese or spinach with ricotta. Chicken breast dishes, white fish and seafood options, green salads and simple rice recipes will also pair very well indeed, and we also loved it with a Thai green curry or spicy tofu stir fry.
