This sake, also known as Daikarakuchi, is a spicy, savoury number! Extra dry, it has aromas of radish, cereal, pickled watermelon and celeriac. It definitely needs to be kept chilled, otherwise the spicy warmth of it can impede the flavour, but kept cool it shows green apple and nori on the palate. With a round texture, it's ideal for fatty foods and richer cuisine. Delicious!
Established in the Edo era in 1702, with over 300 years of history, Ozawa Shuzo is the oldest sake brewery in the prefecture of Tokyo (which contains the city of Tokyo). The brewery is famous for its brand “Sawanoi”, which has been produced for generations, and is a collection of rustic yet flavourful sake that are imbued with local character. Located way out west in the city of Ome, an hour and a half by train from central Tokyo, this brewery is a perfect getaway from the city. Surrounded by lush mountains and clean air, you can enjoy the beautiful sceneries of Japan’s gorgeous landscape. The brewery has a sake tasting bar, a sake shop, two homemade tofu restaurants, and a large garden on the property. The garden is a sake lover’s paradise overlooking the Tama River - a beautiful, calming spot to enjoy these wonderful sake.

Incredibly smooth, light, and with a remarkably refreshing character, this gorgeous dry sake from Ozawa Shuzo is a recent creation based on a recipe that’s been enjoyed by locals for three centuries. As such, it deserves to be paired with dishes that are as classic as classic can be, and we especially loved it with a homemade tonkatsu or chicken katsu curry, complete with a beautiful sweet and sour curry sauce. Veggie versions with breaded pumpkin and sweet potato would work just as well, and it’s also excellent with barbecued pork belly, chicken yakitori skewers, grilled white fish and braised squid. Yum!
