Details
With so much lemony flavour in this Fox Tales sparkling, you'd almost expect there to be a little citrus added to the mix. But no, it's all grapes. what a refreshing sparkling wine it is, too. Light-bodied, seriously fresh and crisp the style here is all about vitality and energy, with a lovely tangy bite to finish.
Origin: Australian Sparkling comes from… Australia. Don’t say we never teach you anything. Mainly Grown In: Often found in Victoria, New South Wales, the ACT, South Australia, Western Australia, Tasmania... sometimes even Queensland. But never NT. Sorry. Key Facts: Australia has been making sparkling wine since the late 1800s, and some of the first bottles to be produced were actually sparkling red, a style that has stuck with us until today! In the mid 50s the production of the sparkling wines we know today really took off, and the market for it increased – in other words, people got to drinking! The style has been refined over the decades, and now Australia makes world-class sparkling wines, traditionally based on Chardonnay and Pinot Noir. The style is dry, with flavours of baked bread and green apple, with really lovely, juicy acidity. Great stuff. Fun Fact: A bubbly appetiser? That's right! Sparkling wine is a super fun aperitif/aperitivo (French/Italian) which means it's the perfect thing to sip and stimulate your appetite before you dig into a delicious meal.

Pairing guide
Crisp and packing a real punch of flavour and character, this gorgeous sparkling wine is a real treat at any dining table or beach barbecue, sure to delight the senses and elevate any meal to new heights of sophistication. It’s about as food-friendly as can be and will pair with all kinds of grilled white meats, smoked fish dishes, southern fried chicken and crispy noodle or rice dishes, as well as spicy Thai flavours, creamy pasta sauces and shellfish salads. It’s also a great wine for vegetarian treats like chilli and lime fritters, cauliflower ‘wings’ and grilled corn creations, and will also work well with ripe cheeses like brie and camembert. Yum!

South Australia, Australia
South Australia is a wide and varied state when it comes to wine production. From the coastal regions of Limestone Coast and McLaren Vale, to the warmer inland valleys of Barossa and Eden, to the flats of Langhorne Creek, there's a range of terroirs and temperatures across this wide brown land. As a result, wines labelled with only South Australia can display a range of flavours! The state is probably best known for Shiraz, Grenache and Cab Sav in reds, and Riesling, Sauvignon Blanc and Chardonnay in white. Whatever your flavour, there's plenty to explore!
