Details
The No.29 ‘Authentique Reserva' has been left on its lees (the yeast cells that are left over post fermentation!) for a year longer than the No.01 which gives the wine some more developed notes, to make it a more complex beast. This shows with green apple and lemon zest, matched with some salinity and a touch of bready autolysis.

Located in the heart of Penedes, which for those playing at home, is Cava country, home to the key spanish wine region for sparkling wines. Cava is typically made from the indigenous varieties, Macabeu, Parellada and Xarel·lo, yet aside from the golden fizz that comes from this region, there is also a host of other varieties that have a home in this part of Spain. Enter Dominio de La Vega, who not only makes exceptional Cava, but also focus on still wines and in particular the local red variety, Bobal. Dominio de La Vega have been making wine in Penedes for over 40 years, with a key focus on Bobal as well as producing various styles of Cava and of course a few white wines. Their Bobal is made into several styles of red wines as well as a very delicious rosé. The winery focuses on organic methods in the vineyard as well as clean, modern packaging that is sure to draw your attention.

Pairing guide
Luxurious and celebratory, this richer Cava from Dominio de la Vega is a bonafide crowd-pleaser that’s sure to hit the high notes at any dinner party or picnic. It’s a stunning wine to pair with seafood like oysters, lobster, Moreton Bay bugs and scallops, and will also pair very well with shellfish pasta dishes like a classic spaghetti vongole. You’ll find wonderful food pairing options with curried meats and vegetables, and especially with fried Indian paneer and a coconut dal or similar sauce. Filled filo pastries, salads with creamy dressings, and even berry and white chocolate desserts will also work an absolute treat.
