Details
Sauvignon Blanc blends with Semillon here, this is barrel fermented and aged and is a tip of the hat to a classic white Bordeaux-style wine. Rich and deep gold in the glass, this is one of the oaky-white lovers, with layers of vanilla bean and buttery character up top. We love the lime and passionfruit character here too.
Wildeberg are a seriously impressive outfit in South Africa's sub-region of Franschhoek, a wine region that has been formally established for around 350 years! In fact, the Wildeberg farm has been around for almost as long, however, it was not until more recently that younger generations thought to plant vines on the estate. The estate is appropriately named given the context of its geographical location, which straddles the southeastern corner of the Cape’s Coastal Region as the property border runs over the top of the mountain where the Coastal Region gives way to the much wilder side of South Africa. Winemaking is overseen by Jan du Plessis (JD) Rossouw who it has to be said, was born into the game. So much so, that his mother actually worked the harvest whilst she was carrying JD. JDs philosophy is that wine is made in the vineyard, not the winery, as such he has taken point on all of the vineyard plantings across the estate. Once in the winery, he favours wild yeast fermentations and a hands-off, minimal-intervention approach to fermentation.

We just can’t get enough of this crisp and characterful Sauvignon Blanc blend which, true to form, packs plenty of punch when it comes to food-friendliness and versatility. It’s a top pairing for grilled oily fish like sardines, fish ‘n’ chips or seared seafood, as well as pretty much any green vegetable recipe you can think of. Salsa verde, griddle asparagus, chicken breast with plenty of herbs and lemon, and pork chops with homemade slaw will all be excellent, too.
