This stunner has been made in a Fumé Blanc style, which was initially pioneered by the Americans, a Sauvignon Blanc fermented and aged in oak. The oak is very much in the backseat here, with classic Savvy B notes driving this wine. It is bright and alive with intense notes of green bell pepper, spice and flinty gun smoke. Superb.
Christopher Full has got to be one of the most exciting young winemakers coming out of Germany at the moment. Our wine team recently discovered this whizz-kid back in early 2023 on a trip to Germany, where we were immediately drawn in by Christopher's epic wine labels... then things got really interesting. Christopher has Riesling (amongst other grapes) running through his veins and his outstanding, superb range of small-batch, hand-crafted wines are nothing short of exceptional. Full's winery and vineyards are located in the Mölsheim in Zellertal, which is one of the best terroirs and hotspots for grape growing in Germany at the moment. The entire area is effectively a giant limestone rock and the soil forces vine roots to reach deep into the ground leading to low yields of exceptional quality. Christopher tells us that "winemaking is mining for terroir", all of his wines are fermented naturally in small oak barrels and bottling only takes place just before the following harvest.

You really can’t beat the bright, crisp and zesty flavour of a good Sauvignon Blanc, and this gorgeous release is about as food-friendly as a white wine can be. We’d highly recommend serving it alongside creamy goat’s cheeses, green salads and dishes which make use of basil, coriander, parsley and other soft herbs. Chicken breast with lemon, white fish fillets, and green vegetables like asparagus and peas would also be excellent here. It’s also capable of handling some spice, so feel free to explore Thai and Sichuan cuisine when seeking a pairing for this delicious wine.
