The impressive Savatiano train continues with Spiros' 'Novalis' cuvée. Neutral up top, the wine will open up after a bit of air, showing notes of crushed rocks and lime leaf. Taut, mineral and direct. No oak used here, this is a wine for those who like their white wines on a tightrope, structured and intriguing.

Skoumpris is the home to one of Central Greece's hottest winemaking talents: Spiros Skoumpris. The small, boutique winery and vineyards can be found just off of Greece's mainland on the island of Evia (which is only separated from Central Greece by a slither of water). The vineyards here boast a lot of Savatiano and Moschofilero - many of the latter are old vines. The team favours a minimal intervention approach to winemaking. Production here is low, with a modest 20,000 bottles being produced each year. The vineyards form part of an old river bed with mostly sandy soil. Our wine team recently took a trip out to Greece to visit Skoumpris, we immediately fell in love with the wines and with the family. Savatiano is a grape that is gaining increasing popularity in Greece and beyond, and it is thanks in no small part to producers like Skoumpris that are finally pushing the needle with this grape. Merlot, Syrah and the more local Malagousia are also grown here.

Savatiano wines, such as this gorgeous release from Skoumpris, are prized throughout Greece for their versatility with a range of dishes and ingredients, and we just can’t get over how well it pairs with some of our absolute favourite flavours. On the one hand, it’s brilliant with classic Greek flavours like spinach with feta, calamari rings and squid salad, or broad bean dips and taramasalata. On the other, you can absolutely go off-piste and match this bottle up with roast chicken dinners, classic British fish, chips and mushy peas, and Caesar salad or similar dishes. Delicious!
