The saltiest and tangy-est of all the sherry styles... this is Manzanilla ("man-than-ee-ya"). Slightly floral notes of Chamomile tea here with some yeasty notes. In the mouth this is dry, and delicate. The palate is soft, with typically salty flavours that are unmistakably Manzanilla in style. Lots of freshness by the way of good acidity and a lifted, slightly bitter finish.
Sanlúcar de Barrameda is a town perhaps better known for its particularly saline Manzanilla styles of sherry than anything else. Viños Mar 7 can be found in the heart of the town. The project is headed up by María José Romero and her family, who produce some fo the best Manzanilla sherry around. The Mar 7 vineyard is perfectly placed to make the most of the regions climactic conditions. It dates back to the 1820, and is farmed under biodynamic practice. María produces two Manzanilla styles, one being unfiltered; an Amontillado and an Oloroso as well. Finally, what sherry offering wouldn't be complete with the lusciously sweet PX pudding wine! The brand was conceived when María decided to produce sherry to honour her winemaking ancestors and her own heritage. Everything she produces is aged in old American oak cask, her hands off approach to winemaking means that she does not use any additions in the cellar, during the winemaking process.

It’s a brilliant wine to pair with robust fish dishes - smoked fish, from white fish to salmon and everything in between, will work particularly well. Fried cheeses, vegetable pâtés and terrines, and even less spicy Indian curries will all match beautifully here, and you’ll get equally good results from simple pasta dishes, steamed greens, and spring veg risotto, too.
