Details
A stunning sparkler from the talented team at Bedin, this pink fizz is sure to delight with notes of fresh strawberry, candied raspberry and subtle herbal notes of fennel. This is as clean as a whistle, with lovely purity of fruit on the palate and a crisp, fresh, zippy finish making this very drinkable indeed.
Società Agricola Colli Asolani was formed in 1990 by Giovanni Bedin who owned a vine nursery in Veneto, Italy. However, for a better understanding of this producer's history, we need to go back to his grandfather, Giacomo who purchased land in 1948 and planted his vines. Over the decades the family business has been passed from father to son and now lies in the capable hands of Enrico Bedin. Together with his brothers, Luigi, Damiano and Denis, the four have turned Colli Asolani into a modern outfit that is producing some of the best Prosecco around. The estate now owns around 40 hectares of vineyards that cover both DOC and DOCG (Italy's highest mark of quality) sub-regions. Of particular note is the Asolo DOCG, which in 2014 was conveniently named Colli Asolani (from Asolo), a name that the Bedin's winery and their brand now share with this prestigious Prosecco-producing region. Across their range, the Bedins are producing wonderfully clean and fresh examples of declassified 'frizzante' style wines, through to precise Proseccos that range in their style and sweetness. We are delighted to be working with them here at Good Pair Days.

Pairing guide
Everybody loves a glass of pink fizz, but this rosé sparkler from Adalina truly dials up the sophistication, offering an amazing bouquet and delicious range of soft fruit flavours. It’s the ideal pairing for raw meat and shellfish dishes - carpaccio, tartare, and sushi, especially - and will also work well with Moroccan lamb creations, duck breast specialities, and spiced charcuterie like ‘nduja and blood sausage. Liver pâtés, olives with mint and parsley, and nuttier cheeses will also work well, and it’s going to be heavenly with desserts of red berries or plums. Yum!

Wine region

Veneto, Italy
The Veneto wine region is located in the north-east of Italy and is known for producing some of the most distinct wines in Italy. The region has a Mediterranean climate, with hot, dry summers and cool, wet winters. The broader region is home to three DOCG and twenty three DOC wine regions and produces iconic wines like Prosecco, Soave and Amarone. The region is the third largest in Italy and accounts for the bulk of Prosecco production in the world.
