The term 'Brut Nature' refers to the fact that there is no added sugar in this wine, it's totally dry. Cava's three grapes go into this wine: Macabeo (45%), Xarel-lo (40%) and Parellada (15%). Baked apples and ripe peaches dominate here with a slightly salty tang from top to bottom. Effortlessly balanced and poised.
Meet Joan Miquel Canals and his talented team who have been crafting epic Spanish sparkling wines out of the Cava designation since the late 1990s. Joan himself has a doctorate in oenology (winemaking), he is considered by his peers to be an expert in sensory perception and has written and published over 50 articles on sparkling wine - are you excited to taste his wine yet? We discovered Canals Nadal in the spring of 2023 whilst meeting with an agent who has some awesome wines in his locker. At Good Pair Days, we have always prided ourselves on showcasing the very best of Spanish sparkling wine, and we weren't actually looking for another Cava... until we tasted these. Everything in the vineyard and cellar is done by hand and their wines are produced from organic grapes. We were particularly impressed with their 'Adda' cuvée, which utilises the three core grapes of Cava, but sees Parellada as the dominant variety in the blend - it's awesome! Canals Nadal's wines are brand new and exclusive to Good Pair Days.

Thrillingly dry and utterly refreshing, this Brut Nature Cava from Canals Nadal is a stunning example of what the Spanish sparkling wine scene does best. We loved this wine with light bites and canapes - it’s an excellent tapas pairing wine, and will happily match with marinated olives, charcuterie, braised chorizo with beans or a grilled squid salad. Fried savoury pastries, filo tarts and crisp green salads will work a treat, and it’s also excellent with Spanish cheeses, spicy seafood and fish dishes, and salty ingredients like anchovies, capers and feta.
