Furmint is the grape here folks, and it has a knack for producing incredible wines across the spectrum, from bone-dry to sticky-sweet. This barrel-fermented number boasts attractive aromatics of sweet spice with a lovely candied apple character on the nose. This is fresh, with plenty of citrus energy, and taut tension with a lick of tannin on the finish.
Bodrog Winery was founded in 2007 by János Hajdú and Krisztián Farkas who at the time, were a bright-eyed and bushy-tailed duo fresh out of university with their winemaking degrees and on a mission to make their mark on the wine world. They started out with a modest 1.2 hectares of vineyard land which is passed on to them by their families. Since then the pair have grown their holdings to just over four hectares. Bodrog produces an impressive range of both still and dessert wines ranging from dry whites, to late harvest sweets, all the way up to the infamous sticky wines under the Tokaji Aszú designation - these are amongst the most famous sweet wines in the world. János and Krisztián have had two quite different entries into the wine game. János is from the nearby township of Kisfaludi; here his family have been tending to vines for generations, vines which here eventually passed on to Bodrog. Krisztián has taken a slightly different route; born in Budapest, he cut his teeth first as a sommelier and later as a wine merchant, before leaving the world of wine commerce behind to pursue his lifelong dream with his friend.

Almost criminally underrated in the UK, a good dry Tokaj is one of Hungary’s great gifts to the world. This elegant white wine is going to pair amazingly well with decadent dishes of grilled lobster, dressed crab and freshwater fish such as pike and trout, and will also match beautifully with herb-crusted chicken and all kinds of delicate and aromatic Asian fare. Most vegetable dishes will work well, and it’s not half bad with saffron chicken, poultry tagines or breaded pork escalopes, too.

Tokaj, Hungary
Tokaj is a historic wine region in Hungary known for its sweet white wines made from the Furmint grape variety. The region's winemaking tradition dates back to at least the 16th century and was recognized as the world's first official wine region classification system in the 18th century. Tokaji wines are characterised by their high sugar content, acidity, and complex flavours resulting from the Botrytis cinerea fungus (also known as "noble rot") that infects the grapes. Tokaji Aszú is the most famous style of wine produced in the region, with a range of sweetness levels from three to six "puttonyos" (a unit of sweetness) depending on the amount of botrytized grapes used in the wine. The region was designated a UNESCO World Heritage site in 2002.
