Details
Cabernet Sauvignon is a versatile grape - it can be suave, elegant and charming, or rich, decadent and smoky. This is very much in the latter camp - it smells like a campfire, with plenty of charcoal and smoke, and plenty of dark berry fruit, like blackberry and black cherry. There's notes of cinnamon, clove and vanilla as well - the oak really shines through. Plenty of soft fruit on the middle palate, with a lovely finish and grippy tannins. This is a serious red that balances fruity and savoury notes perfectly!

Wellington Wines is living proof that often, the best results come about through collaboration, sharing, and the coming together of different visions and styles. While we’re all for small, boutique, and heritage-based wineries here at The Wine Gallery, there’s something truly impressive and heartening about the way Wellington Wines has come about. This co-operative was born by the joining of three separate wineries, their strengths combining to produce wines which are the very essence of their landscape. In 2013, the heads of Bovlei Winery, Wamakersvallei Winery, and Wellington Co-op Wines got around the table and decided together that the best way for them to spread their message of quality, modern, and forward-thinking South African wines was to join forces, and do what they all did best together. The praise and awards came thick and fast soon after, and it’s fair to say they’ve never looked back. This collection of wineries has access to some of the finest terroir in the Wellington region, where the sun-baked earth is tempered by cool breezes from the south. Here, classic South African wine grapes grow to full ripeness, maintaining their acidity and structure due to the warm days and colder nights. The Wellington crew have the decades and expertise to know to keep their yields small, their chemical use limited, and to trust the fruit to do its thing on the vine… all of which results in wines which really capture the character of this part of the northern Paarl wine region.

Pairing guide
Rich, tannic, and beautifully deep in flavour, this Cabernet Sauvignon is a real winner when it comes to food pairing. It’s got the strength and power to stand up to some really strong savoury flavours, so don’t shy away from the more powerful cuts of meat or your spice rack when cooking up a storm to serve with this wine! Cabernet Sauvignon loves beef, lamb, and game, especially the cheaper cuts and offal which pack such a punch when it comes to flavour. Mushrooms, aubergine, and strong cheddar cheese are also going to work wonders with this delicious vino, so get creative in your kitchen, and be as bold as you please!

Wine region
Wellington, South Africa
The Wellington wine region is located in the Western Cape province of South Africa, about 60km southeast of Cape Town. It is a small yet highly regarded wine-growing region known for producing high-quality Pinotage and Chenin Blanc. The mountainous landscape heavily influences the region; the mountains cast long shadows over the vineyards contributing to later sunrises and earlier sunsets, which lengthens the ripening season. The climate is Mediterranean overall, with dry, warm summers and cool, wet winters, and the soils are mainly decomposed granite, which provides good drainage for intense, pure-fruited wines. The vineyards in the Wellington region are primarily situated on the lower slopes of the Hawequa Mountains. Some of the earliest vines were planted in mid 18th century; it comes as no surprise that the Wellington wine industry is an integral part of the local economy. Today, Wellington has become one of South Africa’s most important wine-growing regions!
