Details
Cassis and blackcurrant jam aromas greet you alongside leaf and vanilla with this classic Cabernet Malbec from the Watervale vineyard. It has all the developing leather notes you’d expect of a seven-year-old wine, but there is so much primary fruit still; it’s ripe and round with a smooth, plush palate and has a sanguine, meaty edge, finishing with dusty tannins. Drinking perfectly!

Tim Adams started his wine career under the guidance of legendary winemaker Mick Knappstein and followed with positions at Leasingham and Quelltaler before establishing Tim Adams Wines in 1986 with his wife Pam Goldsack. Passionate about the Clare Valley, they source fruit from their own vineyards and those of growers from all areas of the valley. With their iconic Aberfeldy Shiraz as benchmark, they focus attention on selecting Clare Valley grapes for their authentic varietal and regional characters. Years of hard work, passion and curiosity have resulted in a progressive family winery that is committed to creating elegant wines, without forgetting its obligation to the Australian wine industry, the environment and the wider community. Tim Adams Wines is a constant recipient of awards, reviews and accolades in Australia and overseas, and in 2016 Tim himself was recognised as one of Australia’s iconic winemakers in the book, ‘Ten Apostles - Stories of Australia's Iconic Winemakers’.

Pairing guide
This gorgeous blend of two of our favourite red varieties - combined by a master of balance of distinction, no less - was always going to hit the high notes. We loved this wine with a hearty dinner of roast beef with all the trimmings, but it’s also a great wine for rustic barbecue favourites, ribs, chops doused in chimichurri sauce, southern BBQ specialities and for umami-rich grilled veggies like eggplant and zucchini. Meaty and robust bean or lentil casseroles are a great choice, and it’s fabulous with a chilli con carne or similar Tex-Mex recipe too.
