Made in the traditional method (AKA Méthode Champenoise), this 50/50 blend of Pinot Noir and Chardonnay from Luján de Cuyo in Mendoza, sitting 1030 metres above sea level, displays persistent and delicate fine bubbles and aromas of pear, citrus and honey, with notes of almonds and toast. It’s vinous and textural with a floral edge and balanced chalky acidity. It's elegance personified - or should that be Champagnified?!
There are plenty of cultural, artistic, ethnic and historic links between Spain and Argentina. The two countries have supported and influenced each other throughout much of modern history - they share a language, a love of beef, and a serious passion for hearty, fiery, passionate wines. Las Perdices winery is a pretty decent example of this connection, and the winemakers behind this bold and forward-thinking winery left their ancestral home in sun baked Andalusia in southern Spain, headed across the Atlantic to Argentina, and never looked back. Their decision proved to be very good one, indeed. Run by Don Juan Munoz Lopez and his dedicated family of fellow wine enthusiasts, the winery takes its name from the partridges (perdices) which roam across the vineyards, pecking at seeds and keeping an eye on proceedings. This is a winery where things happen slowly, the long ripening season allows the fantastic grapes to grow to their full potential, and take on the best features of the stunning terroir found in this part of the Mendoza wine region of the country. Slowly, but properly, Las Perdices combines the best traditions of sunny Spain with the New World bravado and experimentation Argentina has become famed for.

Thrillingly dry and with a crisp, clear and oh-so sophisticated character, this charming sparkler from Las Perdices is a real treat to the senses. We love pairing this bubbly with battered fish, tempura prawns and elegant treats like lobster thermidor… but it’s going to be every bit as good with veggie fritters, smoked salmon pancakes, avocado brunch dishes and spicy noodles. Fried rice recipes, crispy duck, croquetas and patatas bravas will also be brilliant here.
