Incredible wine, with bold aromas of candied orange peel, dried peach and nectarine and then waves of savoury notes - grilled nuts, salted butter caramel, furniture polish and coffee beans. The wine is fortified, so has extra warming spices from the alcohol, but is never heavy or fat, instead finishing zesty and salty.

This Madeira is a real treat, and one which has mountains of food-pairing potential. It would be no bad idea to match this sweetly sticky wine up with the sweet ‘n’ spicy flavours we associate with Christmas cakes - dried fruit and nuts, given plenty of depth with the addition of ginger, cloves, and cinnamon. Burnt toffee flavours are also a great shout, making this wine perfect for a classic tarte tatin or toffee pudding. However, you don’t have to keep things sweet - Madeira is an awe-inspiring match for strong blue cheeses, game dishes, and especially mushrooms, so be open minded and find your perfect pairing!
