Gundog Estate have been making their 'Wild' Semillon for a number of years now, experimenting with interesting winemaking techniques to push Hunter Semillon to places it doesn't normally venture! The 2021 vintage is exuberant and fresh, with a hint of sweetness offset by very tangy acidity. Highly aromatic, it shows lemongrass, peach and some herbal tea notes.
Matt Burton is the brains and winemaking nous behind Gundog Estate. Since 2011, when Matt decided to step out and establish the Gundog Estate wine business and cellar door, the winery has been carving out a niche for itself and creating a name for idiosyncratic wines of great character, in a region where homogeneity is sometimes applauded. The Indomitus wines represent a departure in both style, and production technique, for Gundog Estate. Fermentation with naturally occurring yeast, and partial fermentation of whites on skins, are two key practices they have implemented to great effect. In an attempt to deliver wines that strike a fine balance between fruit flavour and complexity, they produce quality wines that tell a story of the season and region. The wines offer drinking appeal from day one, but also have the potential age gracefully.

This fabulous Semillon from Gundog Estate is a fantastic reminder of why we love this wine style so much here in Australia - it’s just so good with some of our favourite foods! This wine loves being paired with white meat dishes, and will pair beautifully with chicken or turkey breast salads, simple pork chops in creamy sauces, ham and gammon dishes, and pâtés, too. It’s going to be gorgeous with richer shellfish dishes, especially those featuring coriander and other Asian herbs and spices, and is a perfect match for a creamy risotto or vegan or seafood paella.

Hunter Valley, Australia
The Hunter Valley is located in New South Wales, Australia. It is situated approximately 150km northwest of Sydney and is known for producing world-class Semillon and formidable Chardonnay, Verdelho, Sauvignon Blanc, and Shiraz.
The region has a long history of winemaking, with the first vines planted in the 1830s. Today, the Hunter Valley is home to more than 150 wineries, ranging from small, family-owned operations to larger, internationally recognized producers such as Tyrell’s Wines, Mount Pleasant Wines and Brokenwood Wines.
Hunter Valley comprises the following sub-regions: Upper Hunter Valley, Broke Fordwich, and Pokolbin. The region's climate is warm and humid, relying on rain, humidity, cloud cover and sea breeze to mitigate the warmth. Soil types vary across the region. Generally, Semillon performs well on the sandy alluvial flats, whereas Shiraz prefers the red loamy soil types.
