Details
A light sparkler this, but filled with rich summer fruits and a delicate fizz. It's golden in colour, and offers some brioche and rye cracker on the nose, along with a hit of sweet citrus. The palate offers richer fruit, with peach and grape, with more fresh lemon and mandarin. Simple, juicy and fresh on the finish.

Origin: Australian Sparkling comes from… Australia. Don’t say we never teach you anything. Mainly Grown In: Often found in Victoria, New South Wales, the ACT, South Australia, Western Australia, Tasmania... sometimes even Queensland. But never NT. Sorry. Key Facts: Australia has been making sparkling wine since the late 1800s, and some of the first bottles to be produced were actually sparkling red, a style that has stuck with us until today! In the mid 50s the production of the sparkling wines we know today really took off, and the market for it increased – in other words, people got to drinking! The style has been refined over the decades, and now Australia makes world-class sparkling wines, traditionally based on Chardonnay and Pinot Noir. The style is dry, with flavours of baked bread and green apple, with really lovely, juicy acidity. Great stuff. Fun Fact: The small island state of Tasmania is starting to turn heads over their fabulously refreshing sparkling wines. It makes sense because of their cool climate and ongoing success with Pinot Noir and Chardonnay!

Pairing guide
What would Christmas be without a bottle of Australian sparkling? It’s bright, fun and delicious, and perhaps less stuffy and formal than Champagne… furthermore, when it comes to food pairing, few wines go better with all your favourite festive nibbles. Sparkling pairs well with canapés of almost all descriptions; it will go as well with your grilled prawns as it will with your cakes and bakes. For the best results, however, we’d recommend saving it for a classic fruit-based Aussie centrepiece dessert: anyone for Sparkling and Pavlova?
