Details
Open a bottle of this savvy and you'll know it from the other side of the room! Intense aromatics of guava, grapefruit and fresh-cut grass will instantly awaken all your senses. Pour it up, pull it to your palate, and your mouth will be filled with racy lime and citrus flavours — yum! This wine has some super cool movement on the palate; it broadens out wide on your tongue, and then pulls tight on the finish and leaves your mouth puckering with freshness. Very cool. Very refreshing.

Origin: Likely France, but unconfirmed. Possibly a wild grape variety that was indigenous to multiple areas in slightly different forms. Mainly Grown In: France, New Zealand, Italy, Chile, USA, Sth Africa, Australia (best-known AU regions are Adelaide Hills and Yarra Valley). Key Facts: If you’re a fan of a lime twist in your drinks, the smell of fresh cut grass in the morning, and have been told you are intense or that "you sure stand out in a crowd", well, you’ve met your match. Sauvignon Blanc is an all-dials-at-max kind of grape, which means it's going to fist pump your senses with its intense (and sometimes pungent) aromas, mouth-watering freshness and a cleansing herbaceous character. As one of the most planted white grapes in the world, it’s no wonder it has claimed hearts in various styles; It can be lean and zesty when it’s from cooler climates and fuller and more tropical when grown in warmer ones. Fun Fact: In French, Sauvignon means "wild". Some say this reflects the wild nature of the Sauvignon blanc grapevine, which is quite vigorous and can grow out of control if not monitored by vineyard workers.

Pairing guide
The Ashton Winery Sauvignon Blanc is a fantastic example of everything we love about this grape. Fresh, zesty, and packed full of exciting flavours. As soon as we tasted it, we just knew it was going to be fantastic for food pairing. Like most Sauvignon Blanc, this one pairs amazingly well with herb-based dishes, green veggies, kale, asparagus, and goats’ cheese. It’s also a real winner with light and freshly-cooked seafood, and more delicate fillets of white fish like sole, bream, or bass. Keep it fresh, keep it simple, and you’re sure to discover fabulous results!
